Intrigued to know where this perfect destination is on the map? Today let’s talk about one of the oldest wine making countries in the world.

Georgia is one of the oldest winemaking countries in the world, with a history of winemaking that dates back over 8,000 years.

Georgian wine making is unique in that it’s characterized by the use of qvevri, large earthenware vessels buried underground, for fermentation and aging of wine.

Today, Georgia is home to over 500 grape varieties and a number of wineries producing high quality wines.

Kakheti is the largest wine producing region in the country of Georgia, and is known for its dry, full bodied red wines made from Saperavi grapes, as well as its white wines made from Rkatsiteli grapes.

The Georgian Wine Making Process

The winemaking process in Georgia is deeply rooted in tradition and involves several unique steps that set it apart from winemaking in other parts of the world.

-The process typically begins with the selection of the grapes, which are harvested by hand and sorted.

-The grapes are then crushed by foot in large wooden tubs called satsnakheli. The crushed grapes, including the skins, stems, and seeds, are then transferred to qvevri, large earthenware vessels that are buried underground.

-The qvevri are coated with beeswax to prevent any contamination of the wine during fermentation.

-During fermentation, the grape juice is stirred regularly to ensure even distribution of the skins, which give the wine its characteristic tannins and color. The wine is then left to age in the qvevri for several months to several years, depending on the style of wine being produced.

-Once the aging process is complete, the wine is bottled directly from the qvevri without any filtering or additional processing. This results in a wine that is often cloudy and has a unique flavor profile that reflects the local terroir and the traditional winemaking techniques used.

The winemaking process in Georgia is a time honored tradition that emphasizes natural fermentation and minimal intervention, resulting in wines that are truly unique and reflective of the country's rich cultural heritage.
